This book presents important topics relating to food safety and toxicology. Approximately a dozen articles cover topics such as food allergens, dietary estrogens, anti-toxicants in food, risk evaluation and regulatory toxicology. Each chapter is authored by an expert in the field. Food Toxicology discusses both natural toxins and synthetic toxins, such as pesticides, the potential toxicity and anti-toxicity of food additives, and the types of food allergens and their various diagnosis.
New data continually indicate that antioxidants may contribute to reductions in cancer risks and that chronic consumption of low levels of chemical carcinogens in our diet may contribute to an increased risk of developing specific types of cancers. Research also shows that in America today, the leading causes of death are cancer and heart disease.
