CHAPTER THREE: BEANS AND GRAIN RECIPES

Ingredients
- 6 cups filtered water
- 2 cups sorted pinto beans
- ½ cup avocado oil
- 2 bay leaves
- 2 jalapeño (minced)
- 2 medium onions
- 4 cloves of chopped garlic
- 2 tablespoons sea salt
Instructions
- Rinse your beans.
- Add the beans, water, garlic, and bay leave into the Electric pressure cooker.
- Cook for 40 minutes on high pressure.
- Then, use a natural pressure release.
- Once all the pressure has been released, move the beans and water to a large bowl.
- Turn your electric pressure cooker to Sauté and sauté the jalapeño and onion in avocado oil. Add your sea salt.
- Add the beans and water into the electric pressure cooker and keep it on Sauté.
- Mash and stir the beans and cook down until the beans become thickened.
Easy Rice & Black Beans with avocado
The rice & black beans with avocado recipe is easy and simple to make. It is certainly a no-fuss tasty and healthy one-pot that can be served as a main dish.

- Add black beans, brown rice, onion, garlic, and salt.

- Press Manual and decrease time to 28 minutes.
- Once the timer beeps, press Cancel and release the pressure naturally.
- Open the lid and stir the pot content.
- Serve into bowls and squeeze the lime wedge over the food, and stir.
- Garnish with slices of avocado.

Ingredients
- 2½ cups water
- 1 cup raw rice
- ½ cup dry beans
- 8 ounces can of tomato paste
- 1 teaspoon chili powder

Instructions
- Soak your beans for a few hours prior to cooking. Rinse and drain the water.
- Place all the ingredients in the electric pressure cooker and stir.
- Lock the lid, seal the valve, press Manual and cook on high pressure for 28 minutes.
- Once timer beeps, allow pressure to release naturally.
- Open the lid and serve your meal.
- You can serve with chips & salsa or tortillas, and you can serve them alone.
Savory 13 Bean Soup
Bean soup can be filling. It helps to save money and reduce waste as well as feeding a crowd. This recipe uses a 13 bean soup mix, but you can substitute any bean soup mix you have. Enjoy!

Ingredients
- 6 cups of water
- 3 cups of 13 bean soup mix (various beans, peas, lentils, etc)
- 2 cups diced carrots
- 1½ cups diced celery
- 1 ham bone
- 2 large diced tomatoes
- 2 chopped onions
- 4 teaspoons chili powder
- 2 teaspoons garlic powder
- 2 teaspoon sea salt
- ½ teaspoon pepper
Instructions
- Add your beans mix to the electric pressure cooker.
- Add the water and cook on high pressure for 10 minutes.
- Use natural pressure release.
- Rinse the beans and drain, and then place them back into the Electric pressure cooker.
- Add your ham bone, cover with water and cook on the beans setting.
- When the time has run out, use the natural release.
- Remove ham bone, add the remaining ingredients and cook on the soup setting for another 20 minutes.
- Release pressure naturally and your 13 bean soup is ready to be enjoyed.
Appetizing Wild Rice Pilaf
This recipe uses wild rice and brown rice mix but you can use any wild rice mix you prefer. Check the label of the rice mix you are using to see if it is parboiled so you can reduce the cook time significantly. In this recipe, am going to discuss using raw (not parboiled) rice. This wild rice pilaf recipe is an easy and delicious side dish.

Ingredients
- 1¼ cups water
- 1 cup wild rice & brown rice mix
- 1 cup mushrooms (sliced)
- ⅛ cup fresh parsley (chopped) – optional
- 1 clove garlic (minced)
- ½ yellow onion (diced)
- 1¼ teaspoons Better Than Bullion Vegetable Base
- 1 tablespoon avocado oil
- Salt & pepper to taste
Instructions
- Wash and drain your rice mix, and set aside.
- Press the Sauté button on the electric pressure cooker and add into it.
- Once the oil has heated, add mushrooms and onions, and cook for 4 minutes while you stir constantly.
- Stir in garlic and let it cook for 30 seconds.
- Then, add the rice mix and toast it for about 2-3 minutes, stirring frequently.
- Turn off the heat; pour in water and the BTB vegetable base. Then, scrape the bottom and side of the pot to remove any rice that might have gotten stuck.
- Lock the lid and press Manual and cook on high pressure for 20 minutes.
- When the timer beeps, use a quick release method and turn off the cooker.
- Remove the lid, stir and taste to see if more salt is needed.
- Garnish with chopped fresh parsley if you want, serve and eat warm.
Easy Wheat Berries
Wheat berries are tender and chewy. They have a sweet, nutty flavor that works well in savory dishes. Even after long hours in the slow cooker, they hold their texture and shape.

Ingredients
- 3 cups water
- 1 cup hard white wheat berries
- A pinch of salt
Instructions
- Pour water into the electric pressure cooker. Add the wheat berries and salt.

- Press Manual and set cooking time to 30 minutes.
- When the timing is up, use a quick pressure release.
- Drain the wheat berries with a strainer and enjoy them in other recipe or by themselves.

- ½ teaspoon ground pepper
Instructions
- Rinse your beans.
- Add the beans and water into the electric pressure cooker and cook for 10 minutes on high pressure.
- Release pressure naturally.
- Drain, rinse the beans and place them back into the Electric pressure cooker.
- Cover the beans with water and add other ingredients.
- Cook for 45 minutes on “Bean” function.
- Release pressure naturally and enjoy
Tasty Mushroom Rice Pilaf
This recipe is delicious and healthy. It is a lazy and tasty one-dish dinner. To get the best taste, use fresh produce, but if you don’t have much time, just buy pre-chopped frozen vegetables and cook them without thawing since you will cook everything through in 8 minutes.
