Postharvest losses remain a serious problem in the fresh produce sector. This collection reviews advances in preservation and disinfection, monitoring and management techniques to optimise safety and quality of fresh fruit and vegetables.
This book reviews key advances in preservation techniques for fresh fruit and vegetables.

Part 1 summarises developments and improvements in preservation technologies such as cooling, controlled atmosphere storage, modified atmosphere and active packaging as well as barrier coatings. The focus of Part 2 is on post-harvest safety management and disinfection. Chapters cover current research on mechanisms of pathogen contamination of fresh produce, as well as improvements in sanitising regimes and disinfection techniques using heat, irradiation and plasma, ozone and natural antimicrobials. The final part of the book surveys advances in monitoring postharvest quality of fresh produce and smart distribution systems to maintain the quality of horticultural produce.

Professor Chris Watkins is Herman H. Cohn Professor of Horticulture and Associate Dean at Cornell University and Director of Cornell Cooperative Extension. An internationally-renowned expert on postharvest physiology, and a Fellow of the American Society for Horticultural Science. He is the current Chair of the International Society for Horticultural Science (ISHS) Division for Postharvest and Quality Assurance, and a member of the editorial board of the journal Postharvest Biology and Technology. Dr Kerry Walsh is a Professor at Central Queensland University working in the field of assessment of fruit quantity and quality. Dr Walsh' research focusses on the development of near infrared spectroscopy for assessment of fruit quality in both online and hand held formats, as well as the development of machine vision based tools for assessment of tree fruit load in terms of both fruit number and size. Dr. Perkins-Veazie is a postharvest physiologist in the Department of Horticultural Science, North Carolina State University. Her research is on how postharvest storage of fruits and vegetables alters the nutritional and phytonutrient profile. Dr. Perkins-Veazie previously worked for the USDA Agricultural Research Service for over 20 years, is a Fellow of the American Society for Horticultural Science, and serves on several editorial boards for peer reviewed journals.
