Using striking photography and contemporary design, the book explores the undeniable affinities between gastronomy and art. It features a fascinating and expansive historical timeline, which charts parallel events in the two fields, such as early Egyptian tomb painting and the Chinese cultivating soybeans, rice, wheat and barley to create noodles in 3000 BCE.

The book, which aims to place the canned fish industry, one of the oldest and most important in Portugal, firmly in the international spotlight, presents eighteen dynamic chef and artist pairings. The combined output of these pairings, either as an inspirational dish or innovative work of art, is a visual feast that will feed the hearts, heads and stomachs of readers.

A typical Mediterranean cuisine that is defined by the use of natural products, which are properly prepared around healthy ingredients, used by Mediterranean peoples for over five thousand years. People who throughout the ages have developed the art of food preservation. The national canning industry was born in Portugal in 1865, in a country with a unique coastal zone, ancestral fishing tradition and unparalleled fish quality. It is also the oldest and most beloved industry in our country. We elevate canning to an exclusive product and innovate in terms of recipes, through the combination of fresh ingredients, betting on the quality of the preparation and presentation and in this way we promote and encourage the consumption of national preserves. Canned, worked from a new perspective, sophistication and presentation, gaining fans in the world of gastronomy. We make Portuguese preserves an integral part of Lisbon's tourist offer, inserted as a leisure complement for lovers of national gastronomy and culture. We do not serve preserves. We make using preserves within a concept of Mediterranean cuisine. All our dishes are highly healthy because on the one hand they are based on fresh vegetables and on the other we use canned fish, which is a very healthy product, rich in Omega 3, totally organic, free of preservatives and antioxidants. We intend, by making fresh and organic products, to highlight the maximum that the excellent products of preserved Portuguese fish have to offer. The tuna belly or muxama are some of the delicacies that we present in a delicious way. Our terrace has 180 seats and we have a capacity for another 130 people inside. CAN the CAN uses products from national companies that produce canned fish and is an associate of ANICP, the National Association of Canned Fish Manufacturers.
